    A very fine Shincha from Hioki, in the Kagoshima region of Japan. Shinchas are the “new teas” that are one of the first to be harvested in the spring of each year. This Shincha dates from 2021. The harvest was around mid-April. As usual in Japan, it is harvested mechanically.

    The taste of this Kagoshima Shincha is mostly sweet like the sweetness of an artichoke, zucchini and green beans with a very subtle fruitiness reminiscent of a pear. The tea is not very umami, not bitter, and has no hint of seaweed flavor. It is a comparatively light Japanese green tea with a refreshment from the first rains in spring.

    Preparation of the Kagoshima Shincha Asanoka

    This green tea should be prepared extremely carefully. If you use water that is too hot, almost no flavors are released.

    The water should therefore not be hotter than 75 ° C.

    A few Tipps:

    1. Before you brew the tea, you should enjoy its smell. The best way to do this is to put the dry tea leaves in a hot pot or mug. This allows the odorous substances to develop optimally.
    2. Use enough tea when preparing it. On a small jug of about. 150-250ml you should use about 2-3 teaspoons of tea.
    3. Do not let the tea steep longer than 20 seconds for the first infusion. If the tea brews longer, it becomes a bit bitter.
    4. You can pour the tea 3-4 times. After that, a significantly longer steeping time is necessary to obtain an intense taste.

    Ein wunderbarer und sehr empfehlenswerter Tee, noch dazu in Bio-Qualität! 👍🍵

    Schon wenn ich die Teedose aufmache kommt mir ein wunderbarer und äußerst angenehmer Geruch nach frischen Teeblättern und Birne entgegen. Im Geschmack ist der Tee ebenfalls exquisit. Manchmal mahle ich mir eine Portion davon in meiner Matcha-Mühle und genieße so die kompletten Bio-Teeblätter nach Matcha-Art, aber mit weniger heißem Wasser. Sehr lecker, überhaupt nicht bitter, kein Gras- oder Algengeschmack - einfach toll!
